So, tonight I came home from work, played with Lyla, went on a run (2 miles...so proud), and then remembered I had to make dinner. Well, I didn't have to because we have some leftovers, but I wasn't feeling them AGAIN! Last week when I went to the grocery, my least favorite place on earth, I bought items to follow a recipe online at allrecipes.com. Well, I was ready for that one...except for the directions called for baking the dish for an hour and a half! IT WAS ALREADY 7ish. I was not about to have a grouchy Dossinator. I like him just like this: {helping prepare the tortillas}To make these yummy Dosschiladas:
1. I boiled the chicken (1 lb).
2. Next, I mixed up fat free sour cream (8 oz), shredded mozzarella cheese (2 cups), 1/4 tbsp of grounded red pepper, and added in my diced chicken to a large bowl.
3. Ryno started taking the flour tortillas and frying them in oil for 5 seconds on each side. When they were done he dipped them in a bowl of green enchilada sauce and layed them on the cutting board. {I normally never take off my ring unless I have to get my hands dirty}4. I took a spoonful or so of the chicken dip and rolled it up nice and snug in the tortilla.
5. The tortillas were placed in a 9 x 13 pyrex and placed in the oven for 20 minutes @ 375*.

ONE WORD: Delicious.
Ryan says this is our new staple. We had it with some natural salsa. It would also be great with some green onions inside. For 2 of these yummy delicacies it is under 220 calories and under 4 grams of fat. That's a yes in my book!
